Summer, Fresh, Fast

Wow it has been a while since I have posted!  Things have been a little crazy with vacation and playing catch up.  Anyway, tomorrow at the Rutherford County Farmers Market I am teaching another
"Superfoods at the Market " class!  I am really excited about the quick, delicious, and easy recipes that will feature yummy produce from right there at the market.  After the class is over you can take you Ingredient List and buy what you need to make the dishes you just sampled in the class :)

New Potato and Green Bean Salad
This salad is great dish to bring to the next summertime cook out or picnic.  It is a delicious way to showcase green beans and new potatoes without drowning them in mayo.  The mustard adds a nice tang without being overpowering, and you can even add some fresh herbs or some crumbled blue cheese to dress it up!
Zucchini and Squash Ribbons with Ham and Feta
This is a show stopping-beautiful dish, that can be used as a side dish or light lunch.  The ribbons make this dish very satisfying and stretch the amount of zucchini you have.  The feta and bacon add a salty bite to the freshness of the veggies that creates a mouthwatering combination. 

Blueberry and Toasted Almond Trifle
We all want something light and sweet in this summer time heat, and this trifle is a great alternative to the higher fat milkshake and ice cream options.  It can be served in one big dish or in individual glasses for a personalized treat.  The yogurt provides a little protein punch along with the antioxidant rich blueberries, which makes this one nutritious dessert.

 Cucumber Tomato Salsa
This is cool, simple salsa that is delicious on fish and chicken as well as an appetizer with chips.
